Organic Bai Mu Dan White Tea

Our organic, Fair Trade Certified Bai Mu Dan White Tea (also known as Pai Mu Tan or White Peony) hails from China's southeastern Jiangxi province. This superb organic tea is made from the uppermost two leaves and a bud, plucked in early spring and withered and dried in the sun before the buds are able to open. The leaves of this organic tea from China range from green to brown with plenty of buds that show a very light green almost grey white color, covered with a delicate velvety down. The pale yellow infusion has a subtle lingering fragrance, and a mellow sweet vegetal taste.

Origin: Wuyuan Xitou Tea Farmers Association, Jiangxi Province, China

Jiangxi, located on the Eastern side of China, is surrounded by mountains on three sides and sits comfortably in a subtropical climate, making it an excellent place for growing tea. As a whole, tea isn’t a large export from this part of China, but in the north of Jiangxi tea production has become an important part of the agriculture. The Jiangxi WuYuan Xitou Tea Farmers Association reflects the transition of a society from governmental control to democratic processes and market economy. Once state-owned, WuYuan Xitou’s ten tea gardens are now owned by individual farmers who have collectively assembled to make up the farmers association that became Fair Trade certified in 2004.

Steeping Instructions

At Arbor Teas, we believe tea should be brewed to suit your personal taste. We’re happy to make recommendations to get you started, but don’t hesitate to experiment! When brewing your tea, your main considerations are tea quantity, water temperature, and steeping time. We recommend green and white teas to be steeped for 2 to 3 minutes in water heated to not-quite-boiling, just as bubbles begin to form on the bottom of the pan (approximately 170 to 180 degrees F). For the best flavor, use fresh water whenever possible. Try not to steep your tea longer than necessary, as you’ll extract undesirable bitterness from the leaves. If you want a stronger brew, don’t steep longer, just use more tea. And remember to re-steep your tea leaves to get the most out of your leaf!

    I just got this and love it. I disregard any 'steeping times' and leave the tea ball in there the entire time I drink (even up to 2-3 hours). I am a big fan of the flavor of this tea and really like it. It has a great flavor imho!

    I ordered a bunch of different kinds of tea from Arbor recently and this one was surprisingly my favorite. I have tried white teas in the past and always been a bit underwhelmed by their lack of flavor, but this one was so complex, sweet, and floral. I did short steeps and resteeped 5 times and it was lovely.

    This is one of my top favorite teas. The flavor is mild but extremely well rounded and there is something very satisfying about the way it goes down. Here is where it places on my rating scale for various attributes: Taste - 5/5 Stimulation - 3/5 Clarity and focus - 3/5 Mood elevation - 4/5

    This tea never ceases to both delight and suprise me - it's so cheap I almost can't believe it's as good as it is, but every single bag delivers. It's more like Shou Mei in some ways, particularly the mentholic complexity and light tobacco notes, but it looks like Bai Mu Dan, which is sort of a fun confusion for my tea nerd brain. It's good out of the bag, but it really starts to shine after about a month in an airtight container and just gets better the longer it sits. I brew it in unglazed purple clay or grandpa style, and one serving of 5 grams will last for a couple days of heavy brewing, so it's an absolute steal for the price. I've been buying it for years now, it always delivers, and its become one of my favorite daily drinkers from Arbor, so I can't praise it enough...

    Tastes of hay lightly sweetened with honey. No bitterness or astringency with a very light minerality. Quite smooth and refreshing. Beautiful as iced tea. A definite keeper!
