Savory and Intriguing
This tea has a very subtle character, even when brewed with three teaspoons per cup. The scent is surprisingly floral, with savory and leafy undertones. It reminds me of a lush garden on a warm, humid summer day, after most of the blooms have faded. The flavor features notes of cabbage, perhaps asparagus stems, and savory green vegetation. The flavors are light and delicate enough to be pleasant and intriguing, rather than soup-like, and stand up well to all-day sipping. This tea is warm and slightly brothy in texture, with no astringency or bitterness. I'm able to brew it twice without losing much flavor, and a third time for a softer cup. If you're a fan of sweet teas with bold, brassy flavors, this won't be for you. If you enjoy green teas with complex, savory, subtle flavors that ask to be examined and studied, then this tea is absolutely worth a try.
